RESUMEN.
En Uruguay, existen especies nativas que producen frutas comestibles, muy apreciadas por los pobladores locales. Actualmente estas frutas participan escasamente de la cadena de alimentos, aunque recientemente se han comenzado a cultivar, utilizar y comercializar. La Facultad de Agronomía, el Instituto Nacional de Investigación Agropecuaria y el Ministerio de Ganadería Agricultura y Pesca desarrollan un programa de selección de frutas nativas, en conjunto con otras Instituciones y pobladores en general. El programa se basa en la prospección y colecta de materiales frutícolas a nivel nacional, su instalación en Jardines de Introducción y predios de productores, donde se caracterizan y evalúan. Paralelamente, se lleva a cabo un programa de cruzamientos dirigidos, con el objetivo de mejorar características deseables. Se destacan cinco de las diez especies estudiadas, guayabo del país (Acca
sellowiana Berg Burret), pitanga (Eugenia uniflora L.), arazá (Psidium cattleyanum Sab.), guaviyú (Myrcianhtes pungens Berg Legr.) y cereza de monte (Eugenia involucrata L.). Se han obtenido importantes avances en la caracterización y evaluación de numerosos materiales y en estudios de su biodiversidad. Se cuenta con materiales seleccionados y propagados. Por
otra parte se han desarrollado protocolos de industrialización, talleres de formación y promoción del cultivo, proyectos agroecológicos, huertas familiares y escolares y proyectos regionales.
Profundizar en la valorización de los frutales nativos, favorecerá su desarrollo, conservación y utilización en forma sustentable.
ABSTRACT.
In Uruguay, there are native tree species that produce edible fruits, highly appreciated by local people. Currently, these fruits participate poorly in the food chain, although recently their cultivation, use and commercialization have increased. The Faculty of Agronomy, Instituto Nacional de Investigación Agropecuaria and Ministerio de Ganadería Agricultura y Pesca, have developed a native fruit selection program, along with other institutions, social actors and people in general. The program is based on the prospection and collection of interesting
material, that are grown in Introduction Gardens and farmer lands, where they are characterized and evaluated. At the same time, a controlled pollination program is being conducted, with the objective of complementing desirable characteristics. Five of the ten species studied are highlighted, feijoa (Acca sellowiana Berg Burret), Surinam cherry (Eugenia uniflora
L.), strawberry guava (Psidium cattleyanum Sab.), guaviyú (Myrcianthes pungens Berg Legr.) and cereza de monte (Eugenia involucrata L.). There have been important improvements on the characterization, evaluation and studies on the biodiversity. At present, the program counts with plant selections. On the other hand, protocols of industrialization have been developed, formation and promotion seminaries, agroecological projects, home and school gardens and regional projects. Deepening on the valorization description of native fruit trees will help their development and conservation in a sustainable way. MenosRESUMEN.

Uruguayan meat production systems are based mainly on grazing pastures. More intensive systems have been growing by adding concentrate to grazing animals to improve performance and beef carcass and meat quality. Thirty two Hereford steers of 20 months of age, were randomly assigned to 4 treatments as a result of combining 2 levels of forage allowance (LFA: 2% and 4% of live weight LW) and supplementation (S: 0.8 and 1.6 % of ground sorghum), where: T1 = 4 % LFA + 0 % S; T2 = 2 % LFA + 0 % S; T3 = 2 % LFA + 0.8 % S and T4 = 2 % LFA + 1.6 % S. Steers from T1 and T4 produced heavier carcasses (HCW) and higher back fat thickness (BFT). When HCW is adjusted by final live weight (FLW) the differences disappeared, showing that differences were due basically for different final weight. Same tendency was observed for the weight of the most valuable meat cuts. Treatments did no affect (P>0.05) ultimate pH, intramuscular fat, meat color at 48 hours after slaughter, tenderness of meat aged for 7 and 20 days. No treatment differences on PUFA concentration and PUFA/SFA and n6/n3 ratio were found. However, meat of T4 animals presented the higher concentration of MUFA, particularly oleic fatty acid. Meat of treatments based only on pasture (T1 and T2) presented the higher concentration of linolenic and stearic fatty acids. Meat produced on grass-fed or combined with low supplement levels, could promote human health. |
